1/2 cup zucchini ,diced

1/2 cup cherry tomatoes diced

3/4 cup fresh mushrooms,sliced thin

1/2 cup bell pepper,diced

1tbsp water

1 cup egg white

corriander leaves finely chopped

salt and pepper to taste

In a microwave bowl combine zucchini,tomatoes,mushroom,bell peppers with 1 tbsp water..cover tightly with plastic wrap and microwave on high for 3-4mins

in a small bowl beat egg with 4 tsp of water

in a medium nonstick pan,add lil olive oil and pour egg white and cook it till golden brown

cut low fat cheese slices and put it on omelet and add some veggie mixture olso ..fold the omelet on low flame cover the pan and cook for 1-2mins untill cheese melts.
