PROTEIN RICH SOUP

Ingredients:

  • 1/4 tiny dudhi- chopped

  • 1/2 cabbage- chopped

  • 1/2 capsicum- deseeded & chopped

  • 2 tbsp – moong dal

  • Salt & pepper to taste

  • 3 cups water

  • 1/2tsp- lemon juice

Garnishing- 1 1/2 cup palak- stalk removed & leaves finely chopped, washed & drained. 1 tsp butter.

Method:

  • Mix dudhi, cabbage, capsicum & dal except spinach & lemon in a pressure cooker with 3 cups water and give 4-5whistle.
  • Once the pressure cooker is cool, blend the vegetables with water to make a puree.
  • Sieve the puree through a soup strainer add lemon juice, salt & pepper to taste.
  • Keep the soup aside.
  • In a frying pan take 1tsp butter and add spinach to sauté. Sauté for 2-3 min, and add the soup.
  • Boil the Soup and serve hot.
